From its humble beginnings in the many French, Slavic and Spanish communities that dot the Louisiana coastline, the state’s oyster industry now supports more than 10,000 jobs.

The industry generates an annual statewide economic impact of about $266 million, and Louisiana consistently ranks among the top two states in oyster production.

In 1999, a consumer taste test confirmed that Louisiana oysters are a favorite, finding that three outof four people prefer the taste, texture and quality of Louisiana oysters over oysters from other states.

Continuously developing new technologies for treating oysters, Louisiana has taken a national lead in implementing strict product handling, storage and processing requirements to ensure your good health. The Louisiana Oyster industry is crucial to the health of our state and the prosperity of our people, so we have dedicated resources to ensure its success and longevity.

Ebenezer Scrooge in A Christmas Carol was described as, “as secret and self-contained and solitary as an oyster.”
